Mushroom & omelette stuffed Croissant |
It's not a question of spoiling appetites; it's an insurance policy against fractious and irritable little (or big!!) people.
A filled croissant hits the mark; it has carbs, good fats, protein and vegetables. It's quick and easy.
Fat-phobics can use light wholemeal soda bread and make a sandwich instead.
Other quick and easy fillings are listed below in tips.
Cost: £1.35 (less if you buy packaged croissants)
Feeds: 1 but easily multipled
Ingred:
1 croissant, sliced open but with both sides still attached
small handful mushrooms, thickly sliced
one egg, lightly beaten
pinch of thyme
Method:
- Heat a frying pan until med-hot
- Add a little olive oil; fry mushrooms until browned and cooked through (a few mins); add thyme; drain on paper towel
- Add lightly beaten egg; cook through, turning once
- Layer egg on bottom of croissant; cover with mushrooms; close croissant and serve
Tips:
Other fillings include:
- scrambled egg and smoked salmon with dill
- ham and tomato
- crisp bacon and fried egg
- sausage and scrambled egg
- cream cheese and grape
- sliced cheddar with chives & onion & slices of apple
