A tasty, filling smoothie that's good for you. |
The smoothie is not sweet in the normal way but it has lovely layers of flavour and a healthy balance of fruit, green veg, fibre and protein. It is very satisfying. Blood sugar should remain stable.
It's as easy to make as all smoothies - fling everything into a smoothie maker and blitz.
Cost: £1'ish
Served: 1 adult or 2 children but multiplies easily
Ingred:
1 small nectarine
a generous handful frozen strawberries
3 inch piece of cucumber, peeled & deseeded
1 generous tbsp dry ultra granola or oatmeal or seeds and/or nuts
1 tbsp 0-fat unsweetened plain yoghurt (opt)
1/2 cup water containing juice of half an orange
a few mint leaves (opt)
Method:
- Whizz in smoothie maker or processor until fully blended
- Consume immediately
- Water down kids' servings
- This smoothie would also work well with blueberries
- Buy fresh berries when prices are good, freeze flat then decant into a zippered freezer bag. Reach in for handful when needed.
- If you have no frozen fruit, replace water with ice
