French Onion Dip with crudites, crackers & crisps

The Blogger first made this wonderful savoury dip not long after arriving in London nearly half a century ago; there was an instant clamour for the recipe. 

Sadly, one of the key ingredients - packaged French Onion Soup (dried)  - seems to have disappeared from supermarkets.  Deep frying onions didn't really work and the spicing was a problem. 

When pushed, the Blogger would spend time picking out croutons from cup-of-French-onion-soup packets (!!). That worked but was time consuming.

So the launch of a new product from Waitrose,  Dried Crispy Fried Onions, some time ago was an opportunity to determine whether the original recipe could be duplicated, or at least mimicked.

The Crispy Onions come in 100 gram containers at a reasonable £1.60. Half a container plus an extra spice gave the dip a slight twist but came as close to the original as possible.  And it tastes ever so more-ish!

Feeds: a group (recipe doubles easily) 

Ingred
   200 gm cream cheese at room temperature (full-fat is ok if there are no weight/cholesterol issues)
   200 gm fat-free Greek yoghurt 
   50-60 gm Waitrose Crispy Fried Onions
   1/4 tsp smoked paprika
   pepper and salt

Method:

1. Beat cream cheese until soft (67 used an electric hand mixer)
2. Add yoghurt, blend well 
3. Add Crispy Fried Onions and smoked paprika; mix till all is incorporated;  refrigerate until the consistency is like clotted cream
4. Before serving, check seasoning 
5. Serve with low salt and/or baked potato crisps OR lentil/chickpea crisps, celery & carrot sticks, radishes, cauliflower florets, rice crackers & French bread

Tips  

• If unexpected guests arrive and you want to make the dip go further, add more yoghurt and a bit more Crispy Fried Onions
