FABULOUS CHEAP, CHEERFUL CHINESE NOODLES

Strictly speaking, 67goingon50 isn't officially back until 4th February but with Chinese New Year coming up on 25 January, a short post seemed appropriate.  

The Year of the Rat is the first of the 12 animal signs in the Chinese zodiac.  Rats (of the Asian zodiac variety) represent wisdom, intelligence, thrift and an especially strong life force -- outgoing, charm, ambition, curiousity, perfectionism but also adaptablility.  

On the negative side, Rats can be stubborn, timid, restless, greedy, picky and aggressive.  Hope those qualities aren't reflected in international politics!

The recipes chosen here by 67goingon50 play on Rat qualities of greed, pickiness and thrift. 

They're all based on the wonderful array of noodles now available in Chinese supermarkets, and to a lesser degree in UK supermarkets.  Think noodles made: with eggs, without eggs, different carbs (common wheat, rice, sweet potato and green bean starch), in thin or medium strands or flat noodles.  

Remember: Chinese supermarkets also stock spring roll, won ton and dumpling pastry.     

All the noodle recipes posted this week are delightful in flavour and texture, utterly appealing and budget-friendly.  They are also quick and easy and a perfect repository of leftovers.
