WINTER TOMATO SALAD, AN INDULGENCE Easy Peasy, Healthy

Tomato cravings in January are difficult to satisfy...


Winter Tomato Salad with Heritage Tomatoes

...not least because winter tomatoes often lack flavour and texture.  But when the body is madly craving fresh tomatoes, it's wise to go with the flow.

67 was surprised that two specialist green grocers in North London recently featured boxes of lovely Heritage tomatoes (older and rarer varieties prized for their flavour and texture - with prices to match!).

This recipe uses imported Spanish tomatoes, the Tigerella - dusky red with green stripes - and Coeur de Boeuf, wonderfully fleshy, squat and ribbed. 
  
Winter Heritage tomatoes are an Indulgence but bought in limited quantities enhances any dish.  



This recipe teamed them with Dutch cherry tomatoes, apparently also at their best at this time of year.  The lovely juicy toms were lightly dressed with good olive oil, lightly salted and garnished with fresh chopped basil.

Served with light wholemeal buns and goat's cheese, or a bean pate with olive oil and chillis, this is a vegetarian dish well balanced in essential amino acids.
