HEALTHY OFFICE LUNCH: CRUNCHY SLAW, Vegetarian, healthy, high fibre, doesn't go soggy

Incredibly good for you...and unlikely to go soggy 
Lunchbox Slaw, a healthy, high fibre make-ahead salad for office lunches
'Lovely crunchy salad.' Taster
This selection of raw veg is crunchy, colourful and full of flavour and makes a perfect lunchbox slaw.  It can be made the night before and as long as the dressing is applied only when you're ready to eat it, the veg stay fridge-crisp.

The base is cabbage, carrots, celery and baby tomatoes.  Add your choice of other veg.  Fruit is optional, is packaged separately and added when ready to eat. The dressing is also packaged separately (but is added to any apples,if using.)

Ingred:
Base: 
   1/3 cup white or red cabbage, shredded
   a small carrot, coarsely grated
   1/4 small red pepper, finely sliced
   1 large stick celery, peeled &   finely chopped (opt)
   2inches/ 5cm washed unpeeled cucumber (de-seeded), in matchsticks
   baby tomatoes 
   1-2 spring onions, white & green, finely chopped OR a few thin slices of red onion (both optional)
   1-2 tablespoons of mixed raw pumpkin, sesame and sunflower seed (opt)


Any or all raw veg plus personal choice:
   thickly sliced mushrooms 
   cauliflower in tiny florets or finely sliced
   green beans, thinly sliced
   mange tout, thinly sliced

   radishes

Herbs (opt)
   Parsley
   Chives

Fruit suggestions: 
   diced mango, peaches or nectarines
   finally sliced apple (packed yoghurt mayonnaise dressing)

Dressing:
    Choice of yoghurt mayonnaise flavoured with lemon/lime juice/balsamic vinegar 
    OR French Dressing

Method:
  1. Throughly mix base, raw ingredients and herbs; pack into a self-sealing sandwich bag* or a plastic box with close-fitting lid
  2. Pour seed mix into self-sealing plastic bag (opt but recommended for vegetarians/vegans)
  3. Pack fruit into a self-sealing sandwich bag; if taking apples, add a little dressing to prevent browning before packing (or take a whole apple and a sharp knife wrapped in a couple of layers of serviette) 
  4. Prepare dressing; pour into a small jar with tight fitting lid
  5. Place in carrier bag or lidded plastic container and refrigerate

Tips:
  • if worried about leaking lids, cover top of jar/box with cling film before adding lid.  You can also tightly wrap the entire container in cling film
