These easier healthier 'un-fried' potatoes are a great substitute for conventional chips. They don't involve pans of oil and can be dressed up in several enjoyable ways (see below).
Air fryer option below in Tips
Cost: £1
Feeds: 2 but multiplies easily
- Scrub 2 baking potatoes, white or sweet (Prepared as for potatoes but if skins look disreputable, peel)
- Cut each into vertical halves, then each half into 3 wedges
- Toss in a generous tablespoon olive oil; spread out in one layer on a metal tray
- Bake 30-40 mins turning halfway, or until crisp and cooked through
- Lightly salt; serve with choice of seasoning
Garlic & Herb
Mix a couple of finely minced fat cloves of garlic and an equal amount of finely chopped chives or parsley; sprinkle over wedges

Sprinkle over smoked paprika as well as salt

Tips:
For air fryer version: after steps 1 & 2...cook from raw in cold water until boiling - about 8 mins; toss in generous tablespoon olive oil with pepper & salt; air fry 20 mins, turning once.
