Skinnier BBQ Wings with Peach Dipping Sauce: lower in fat but high in taste |
The recipe here is one of the simple but tasty ones. Because who wants complication when we're trying to work out what is common sense during an easing lockdown? The wings need only a few ingredients and is easily made.
67goingon50's oven-baked method guarantees lower fat without losing crispness and can be applied to outdoor cooking as well.
Makes: 24 pieces (recipe easily doubles)
Method:
Ingredients
10-12 decent sized wings
Sauce
1/2 decent coffee mug tomato ketchup (your own or spicy lower-sugar brands*)
1.5 tablespoons molasses/black sugar OR dark brown sugar
2 tablespoons reduced-salt (not low-salt) soy sauce
1-2 dashes hot sauce (tabasco??), to taste
one small dried chipotle chilli, reconstitution water & pureed OR 1/4 tsp chipotle pepper (opt)
- Remove tips from wings, freeze for stock; divide into winglets & mini-drums
- Preheat oven to 200c/400F/180 fan; add a baking rack to a foil-lined oven tray; arrange wings on tray leaving a little space in between
- Bake 20 mins until fat is released & skin is crisping
- Meanwhile, blitz sauce ingredients with stick or bowl blender in a good sized bowl; taste, add pepper & salt and, if desired, more sweetness or heat; set aside about 1/4 of the sauce for the table
- When the wings have reached the beginning-to-crisp stage, take them out of the oven and put them into the sauce, coating them liberally; re-arrange on the rack and put them back in the oven
- Cook a further 15-25 mins (depending on size), turning at least once, and brushing on sauce at least 3 times until beginning to blacken
- If you're planning to use the Barbie, start them off in the oven as in step 6, then cook a further 20 mins on a med-hot grill, turning at least once and brushing frequently.
- Serve with Boozy Peach Dipping Sauce (opt) replacing fresh peaches with drained tinned if you like.
Kids' Version
- sharply reduce or get rid of the chipotle, chilli, tabasco
*Heinz low-sugar ketchup is actually very good
