A wonderful treat made entirely from leftovers...
This fabulous open-faced breakfast sandwich is made from those odd leftover bits of foods too good to throw away. With a tiny bit of time and effort, they'll make a delicious substantial snack. And save money. And avoid waste.
It's healthy too, providing all your daily food requirements in one go: protein, fibre, fruit and something raw.
And, if you've missed lunch or dinner, it morphs easily into something not quite a meal but more than a snack.
Obviously depending not the state of your leftovers, the ingredients - and flavours - will vary.

Makes: 1
Ingredients:
1 tortilla wrap, pref wholemealcouple of handfuls mixed salad, incl some bitter leaves (see tips) OR rocketolive oilbalsamic (preferred) or other vinegargenerous amount of stilton or other blue cheese (soft or hard)1/2 a pear, in very thin slicesfew chopped walnuts
Method:
- For warm tortilla, toss in oven or air fryer for a few minutes
- Scatter over leaves; spray lightly with olive oil & drizzle over balsamic without soaking the bread
- Peel pear, remove core; slice thinly; scatter prettily over leaves
- Crumble over blue cheese; top with a few scattered nuts
- Serve flat, or if using untoasted tortilla, roll up
Tips:
- 67 used mixed Italian leaves
- other easily available blue cheeses: Shropshire, Gorgonzola, Cambazola
- other toppings: almonds, cashews, hazelnuts; sunflower or pumpkin seeds
- Other protein-fruit combos: cheddar with chives plus apple; fig & feta; cooked pork & pomegranate seeds, ham & strawberry; salami & mozzarella
