English spring Lamb is traditionally served at Easter and good lamb remains in the shops for weeks afterwards. 

While lamb legs are often out of the reach of the budget-conscious and prices have risen like everythihng else, there are plenty of cuts that provide a seasonal treat without breaking the bank.

Shoulders and half shoulders of lamb, slow roasted, are gorgously tender and well flavoured.  Lamb ribs, served in a mix of chicken drumsticks and wings, are popular.  Stews and casseroles from a slow cooker are deeply moreish.
