QUICK 'N EASY BRAISED POTATOES, BACON & ONION: side or main, vegetarian option

Singletons, tuck into this when you're ready for supper...

Singleton's delight: Very tasty, thrifty easy meal 

On days when carbs are allowed, this is a terrific simple relatively quick, thrifty supper.

It is so easy to put together and very tasty. It has enough protein and veg to to slow the release of blood sugar and you can top it off with a fried or boiled egg with soft yolk for a lovely oozing sauce.

It is also wallet-friendly and won't draw down on the tinned and dried items stashed away for a rainy day in your cupboard

Cost: not much, maybe £1?
Serves: 1 but mutiplies easily

Ingreds:
2 slices back bacon, fat removed
4-5 new potatoes (pref) or 1 good sized potato, washed but not peeled
1/2 a good sized onion
vegetable oil

Method:
  1. Place a good sized non-stick frying pan (which has a matching lid) on medium high
  2. Chop bacon into 1/4inch/1/2 cm strips
  3. Finely dice onion
  4. Cut potato in slices the width of a pound coin
  5. Spray pan lightly, spread out bacon strips
  6. When bacon starts to colour, add onions and a little more oil; cook stirring occasionally 2-3 mins or until onions are half cooked; push both  to one side
  7. Add a little oil to coat the rest of the pan, spread potatoes over the base; cook 3-4 mins without stirring
  8. Toss potatoes, bacon & onions together; add 1/4 cup water; turn heat down to medium, cover tightly; cook another 5 mins or until potatoes are cooked through (insert knife into the middle; it should meet little resistance)
  9. If topping with fried egg, use another pan; otherwise, soft-boil the egg
  10. Serve with frozen peas, or corn or salad with French vinaigrette dressing

Tip:
Replace bacon with coins of meat sausage that have been poached in just boiled water 10 mins to reduce fat OR vegetarian/vegan sausage
