FREE FROM COMMON WHEAT RECIPES

Note: The Blogger often uses spelt flour, an ancient cousin of wheat, to replace common wheat.  Spelt contains gluten and is not recommended for coeliacs.  The gluten, however, has more protein and is more easily digested than modern/comon wheat.  Organic brands of spelt have no pesticides or herbicides; some are stoneground, not milled, protecting natural oils. 
Spelt flour can replace wheat flour in bread, pastry, crumbles and some cakes and cookies, though adjustments elsewhere are recommended. (67 usually uses Sharpham Farm spelt flour but both Waitrose and M&S offer own-brand spelt flour.)
Other flours used are Besan (chickpea flour), buckwheat flour and polenta (cornmeal - not cornflour).
