KIDS' DELIGHT EGG'N TOAST BREAKFASTS, sugar-free

Easy-peasy breakfasts - without sugar - for school mornings

Both these recipes are nutritious and require little preparation. They're also frugal and use up stale bread.

Hole-in-One Egg Toast is as popular with adults as it is with kids.  Here's a foolproof recipe.  The cost per person is about 40 pence 



Standard supermarket white bread is fine but if you want to sneak in some extra goodness, try one of the half-white, half hidden wholemeal or mixed grain breads. 

The recipe is not so successful with conventional soda bread.


You'll need a biscuit cutter or glass 2 1/2 inchs/ 5 cm wide


Ingred:
    1 slice bread, white or 50-50 wholemeal
    olive oil or butter or both
    1 small-med egg
    pepper & salt

Method:


  1. Heat a heavy frying pan over med-high heat
  2. Cut a hole in centre of bread
  3. When pan is hot, spray liberally with olive oil OR add tbsp butter OR use both
  4. Drop both pieces of bread into the pan; turn heat to med and cook on one side 2 mins or until golden brown
  5. Flip bread; crack egg into centre;  cook until egg reaches sunny-side-up stage, 2-3 mins -- lift an edge of the bread occasionally to check it's not over browning 
  6. Flip again; cook 30-50 secs or until white is cooked through
  7. Serve immediately with toast circle poking into the yolk


Egg & Toast Flowers look pretty and the crispy bread is incredibly more-ish.  These can be eaten without a fork.  

You'll need a muffin tin with good-sized holes.  The cooking time is 20-25 mins.


Ingred:
   slice of bread, med or thin cut is best
   1 small egg
    small square ham OR tablespoon grated cheese
    butter or olive oil

   garnish: small dice de-seeded tomato 




Method:
  1. Preheat oven to 350f, 180c
  2. Remove crusts; brush bread with melted butter or veg oil
  3. With corners pointing upwards, gently press bread into a muffin tin; the bread should be fairly flat against the bottom and sides (this step can be done the night before)
  4. Bake 7 mins or until lightly brown; keep an eye on it
  5. Place ham in bottom of toast flower to prevent 'soggy bottom'
  6. Crack egg into a cup; spoon enough egg white to half fill toast flower; add yolk then enough white to cover yolk 
  7. Bake 20-25 mins or until white is cooked through; insert toothpick to check
  8. Garnish with diced tomato

Tips:

  • mixed-size supermarket free-range eggs are the best value at around 20p each, pretty good considering that eggs are like nutrition-bombs!
  • bread freezes well and defrosts quickly if frozen in pairs in sealable sandwich bags
