CHEESE, ONION & TOMATO SAVOURY BISCUITS: slightly healthier indulgence, higher fibre, easy, budget-friendly

Sweet scones are always a popular choice; savoury ones appear less on dining tables but always, always impress.

67's Cheese & Chive or Frugal Savoury Sardine Pinwheels have a good following. 

Now, try this: Cheese 'n Onion with Tomato.  They are a terrific twist on a classic recipe and are an incredibly more-'ish substitute for bread with thick soups and stews.

The recipe is not difficult but be careful with the tomato paste - you want streaks of flavour, not a faint hum in the background.   The green shoots of spring onions, washed, patted dry and finely sliced can replace onion granules.

Cost: £1
Makes: 4-6 

Ingredients:
    115gm/4oz plain flour plus 
    55gm/2oz wholemeal flour OR  
          175g/6oz plain flour
   1 tsp baking powder
   scant teaspoon onion granules OR 2-3 tbsp finely sliced green spring onions

   35gm/1.2oz grated reduced fat or regular mature cheddar

   75gm/2.6oz cold, cubed butter
   1 med to large egg 
   3.5 tablespoons very cold milk

   1-2 generous tablespoon tomato paste from a tube* OR
   2-3 tablespoons finely sliced fresh but dry green part of spring onions

Pasta with Pesto & Chicken: singleton's indulgence; vegetarian & vegan option

Appealing pasta for a quick midweek meal...

Creamy spaghetti, rich intense pesto & chicken: who could ask for more?
(with Chinese Leaf, Cucumber & Apple Salad)


Unless you're a carb-phobe, pasta is a popular quick meal.  

Not the healthiest of course but thankfully, supermarkets are now stocking wholemeal/higher fibre pastas.

And if you are wheat-free, there are plenty of spelt pastas available in various shapes.  Spelt tends not to swell up as much as wheat when cooked but the texture is similar, the flavour is good and it's easy to digest.  You don't end up dozy after dinner.

This recipe is very easy recipe and the pasta can be cooked in advance.  (see tips below)

It will also use up leftover chicken or other proteins.

The sauce is creamy, true, but single - not double - cream is called for.  Frankly, the dish tastes so good, and is so quick and easy, it's worth it.  

Cost: pennies if you have leftovers and pesto; a little more if you're buying or making pesto
Serves: 1-2

Ingredients:
120-150gm/generous 4-5oz spaghetti 
3-4 tbsp good pesto
130ml single cream
113gm/4oz shredded leftover chicken

Method:
  1. Cook & drain spaghetti, saving some cooking liquid. (See pre-cooking pasta, below)
  2. Heat cream in a med frying pan until small bubbles form at the edges
  3. Swirl in a generous 3 tb pesto
  4. Add pasta and a few tablespoons cooking water; the sauce should be glossy, not gloopy; toss until amalgamated
  5. Scatter over chicken; serve in a warmed dish

Garnish: Dribble over a teaspoon or so of pesto (optional)

Tips:
  • Pre-cooking pasta: cook as normal but cut 3 minutes off the cooking time; the pasta will be very al dente.  Drain, rinse in cold running water; drain agin; add a little olive oil & mix to coat. When cool, refrigerate covered up to two days.  When ready to serve, set a good sized pan of water to boil; add pasta, cook  3 minutes or until al dente.  Add to hot sauce
  • Make this a vegetarian dish by not adding animal protein; make it vegan by using vegan pesto and oat or soya cream

Make-Ahead Chinese Leaf, Apple & Cucumber Salad: frugal, low-fat, high-fibre, make ahead

Crispy crunchy salad - a perfect foil for pasta, and can be made ahead...

Finely chopped Chinese Leaf, Cucumber & Apple Salad 
appeals to all ages

Chinese Leaves (also known as Napa Cabbage) is a lettuce-like frilly leaf with a hard base and core.  It's like a cross between lettuce and celery, and adds plenty of healthy fibre to your diet. 

It's in season at the moment and highly recommended; it's fresh, clean-flavoured and crunchy.

Chinese Leaves are about the same price as romaine lettuce but goes much further.  The leaves are tightly packed and sturdy.  That means they are ideal for make-ahead salads.  No wilted leaves or sorry looking additions with this make-in-advance salad




The leaves are easy to prepare.  The frilly bits are shredded and the white core, finely sliced.  Add cucumber and a simple vinaigrette or creamy dressing for a tasty side, or a base for something more complicated.  Nuts, seeds and fruit (fresh or reconstituted dried) will make for something stunning. 

67's recipe adds fresh apple and bathes the lot in a sweet'n sour lemon, maple and mustard dressing

Serves: 2-3

Ingredients:
3-4 Chinese leaves, washed and trimmed
1/4 medium cucumber, in small dice
1 small apple, unpeeled, in small dice
1 tbsp lemon juice mixed with 1 tb water
2-3 tb walnuts, chopped fine

          1 tbsp lemon zest & juice
4 tb low-fat yoghurt
2 tb mayonnaise  
1-2 tb maple syrup (or honey or sugar)
          1 generous tsp Dijon mustard
